  • Conduct a search of research literature on Google Scholar, using some of the keywords you listed.
  • Once you’ve found an article you’re interested in, read it carefully and thoroughly. keeping in mind the following questions:

    • How was the study designed and performed?
    • What were the article’s conclusions?
    • What is the article’s relevance to the class?

Throughout this course, we’ve seen how religion and culture can have a strong influence on what people eat and don’t eat. How do these influences impact the abilities of public health agencies trying to improve the public’s eating habits? Discuss the challenges that this situation presents to public health professionals. In answering this, think about your own community or a country that you have studied. What might be the challenges in making a difference in how people eat?

B.2 (300 – 500 words)

Having watched the videos on Blue Zone areas (Okinawa, Sardinia, Loma Linda), you have seen examples of how these populations live longer and have a high quality of life. These areas are notable for the high percentage of people who live to 100 and beyond. If you were to implement a Blue Zone lifestyle in your community, what would that look like? Describe the challenges of implementing this. Describe the characteristics of your community, which could be: your dorm; your church; your immediate neighborhood; your fraternity/sorority; or even an entire country. Be sure to include the Public Health steps (Assess, Build, Plan, Implement, Evaluate) in your answer.

Imagine that you are a public health provider with a Master’s in Public Health in Nutrition and a Doctorate in Global Public Health. You have been hired by the Pan American Health Organization on a mission to promote awareness about diabetes and decrease the prevalence of diabetes in Mexico. What will be your recommendations on eating style? What will you recommend from their traditional eating style? What will you not recommend from their current eating style? Get familiar first with the traditional eating habits and culture in Mexico.

B.4 (300 – 500 words)

You have been selected to be in charge of the food division at UC Irvine that oversees the dorm cafeterias. Your job is to help students understand what types of food they should eat and what types of food to avoid or limit. What types of healthy foods would you recommend a student eat for breakfast, lunch, and dinner? Be sure to describe why you recommend these foods. What are the challenges that you think students will have in adopting your recommendations? What methods will you use to encourage and inspire students to follow your recommendations? Be creative in your answers! Think about your own 7-day food journal and the food journal that you reviewed as you are considering the challenges presented by this scenario. Consider what motivates students to change their behavior, given that they are often pressed for time and money. Your plan must be realistic!

You are a newly-hired health promotion program coordinator for a retirement community. Your first task is to plan and implement a sustainable Alzheimer’s Disease prevention program. In your planning, you decide to take a nutrition/diet-based approach to prevention. When pitching your ideas to the manager on-site, how might you explain that a diet-based approach to Alzheimer’s Prevention will be an effective program strategy? Imagine that the President has made you the nation’s Nutrition Czar working side by side with the Surgeon General. The two of you are charged with implementing the guidelines for the Healthy People 2050 initiative. You get to choose one issue to focus on. You are excited to apply your passions on the national stage. Describe the specific issue you plan to advocate for. Detail the outcome you expect to achieve if your legislative proposals take effect. List the stakeholders who will support you and those who will oppose you on this issue. How will your brilliant idea change people’s health and their life for the better?


You are completing an internship in public health communication and are tasked to develop a brochure on diet-based cancer prevention. Your supervisor reminds you that your target population has been assessed as having limited health literacy. Your supervisor has also given you the following instructions: 1) only provide three diet-based cancer prevention strategies and 2) only write one sentence explanation per strategy. Keeping these instructions and the target population in mind, write exactly what you would include on the brochure. You may choose to use an infographic or PPT to design your brochure. You, a concerned teacher at an elementary school, have noticed that students are not eating as healthfully as they should be and cannot identity many types of vegetables and fruits. You want some sort of intervention to be enacted at the school that educates students on healthy eating. You also learn that your local public health agency is looking to institute a healthy eating program throughout the school district and you want to contribute by giving them a few ideas. Based on the video lectures and readings you have encountered in this class, what sort of community interventions/programs would you propose? Provide and explain three of these programs and their components and why you chose them.

C.4 (300 – 500 words)

You are a professor of medicine and public health who has been invited to speak at a conference attended by medical students across the United States. The title of your presentation is “Popping pills vs. eating meals: The need for nutrition-based medical education.” Accordingly, your goal is to encourage medical students to be more aware and competent in diet-based prevention and treatment strategies. Based on what you’ve learned throughout the course, how would you “sell” nutrition-based medicine to your audience of medical students? What examples (drawn from the course material) would you integrate in your presentation? How do these examples advance your position on nutritional medicine?

Imagine that the CDC has declared a dramatic increase in mental illness (for example depression or anxiety) in the community you grew up in. You are a public health official tasked with implementing an intervention program focusing on the community’s diet.
